Mini Oreo Cheese Cake

As I mentioned in my previous blog, I had prepared Oreo Cheese Cake for my few X'mas dinner. Finally I did take some pictures for it. I got the recipe from Table for Two Or More. I love her website, I've tried some dishes from her blog and it really works! My experience, most of the time I need to adjust the recipe which I get from internet, eg: sugar content etc. But for this, I can get the good result for the 1st time testing. Some parameters might be varied because we are using the different oven or cooking style, however for the recipe and method, I highly recommend this website :)

This is a very simple recipe, here are the ingredients. The original recipe was using 150ml condensed milk. However I slightly modified it as this is not the real condensed milk (check this out: TheNutGraph by Tony Pua), and I don't have time to and look for the real one, so I just used 2 1/2 tbsp condensed milk + 2 tbsp brown sugar. The result was good.

 Oreo for top decoration.

Left over oreo will be mashed into crumbs. I don't have the food processor so I crushed it manually, it really took some times :(

Half tbsp crushed oreo filled into the cup. I am new in baking so the mould and the cup size I bought was in fact not really fit in to each other, hehe...luckily the result still ok.

 A closer look.

Beaten egg white. This was the 3rd time I beat egg white, I am proud to say the result is getting better than last time, I remember the 1st time, the egg white turned back to liquid in few minutes.

 The cream cheese mixture.

Beaten egg white was added into the mixture.

 Ready to bake.

Ooppss, almost forgot about the decoration.

The cup size I used was a bit smaller, therefore I can make 14 in totals. (Original recipe was 12). Therefore I have to separate my oreo for extra two, also looks good to me, hoho!

Dang-lang! It smells so good and tastes so niceee~

 Side view.

The cookies will turn soft after you chill it in fridge. However, many of them in fact expect the oreo cookies to be crunchy. Well, if it is crunchy, it will smash the cheese when you bite on it, wont it?

I use microwave conventional oven at home so I increased the baking temperature to 170°C for 25min. I tried 20min, the stick tester was wet, so I maintained it at 25min. Therefore you can see it was puffed up and cracked from oven. I will play around with the temperature again next time. Yeah, it is nice, and it will be many next time :)
